Sweet Potato Crust Quiche

Sweet Potato Crust Quiche will fast become a family favorite and can be used for Meatless Monday by eliminating the grilled chicken. It is gluten-free too. Truth is, you won't miss the carbohydrate-laden crust when you exchange it for a sweet potatoe crust, I think it tasted better! Preheat oven to 350. Start by slicing the potatoes and layering them like a crust into your nonstick Titanium Frying Pan. I am using the 11" Frying Pan here.  You do not have to use any oil or prepare the pan in any way. Make sure the skin and rounded sides of the edge pieces are pointing upward, as this will give it a curled look much like crust, once it is baked.

Bake the "crust" of sweet potatoes for 20 minutes. And yes, the handles of our Titanium Frying pan are oven safe. While that is baking, heat another Titanium Frying Pan and saute the shallots, garlic and spinach. It should take 3-4 minutes to wilt it down. 

Now combine the FILLING ingredients into a bowl and whisk. It is likely time to remove the sweet potatoe crust, so pull that from the oven and turn the heat up to 375.

Begin to layer... first the sauted spinach mixture, then the cubed chicken, then the filling mixture, and finally the crumbled Feta cheese. Put this back into the oven (which is now up to 375) and bake for 35 minutes. Once baked, let stand 5 minutes...

Now this is the interesting part... because I do not like to mark my Titanium surface by using knives on it, I simply slide this right out of my frying pan, onto a serving platter. You can see from this photo, it did not stick to the surface, even though I did not use any oil or fat before baking the potatoe crust. Now it is ready to serve by cutting into slices.

Baked quiche


1 large or 2 medium sweet potatoes

5-ounces of Organic Spinach

Shallots or Garlic if desired to saute with the spinach

3 ounces feta cheese crumbled

Grilled chicken, cubed


1/2 cup milk (I used goat milk but cow's milk is fine)

1/2 teaspoon celtic sea salt

1/2 teaspoon ground pepper

1/2 teaspoon cayenne pepper

4 large eggs plus 2 additional egg whites
