Savory Vegetable Tian

Savory Vegetable Tian will look so beautiful on your dinner table, and will give a colorful spin to the sometimes boring vegetable side. What is Tian? A tian is a french dish that consists of overlapping vegetables baked in typically round cookware. Once prepared it goes from the oven to the table. Sometimes though I like to plate my guests food, so I make sure they all get to see everything come out of the oven before they take their seats.  With vegetable tian, sometimes there is a sauce, or breadcrumbs, or cheese. It can be served as a main dish or a side dish. I kept it simple to highlight the beauty of the individual vegetables. Start by gathering some of your favorite vegetables and ingredients. Make sure you pick vegetables that are colorful to give it a special flare and you can enjoy the excited comments as everyone anticipates scooping this onto their plate.

INGREDIENTS:

TIAN:

  • 1 cup panko crumbs
  • 3 cups red onions, diced
  • 3 large cloves of garlic, minced or finely chopped
  • 1 tsp red pepper flakes
  • 2 Tbsp dry red wine
  • 1 large butternut squash (skin removed with peeler), sliced THIN
  • 2 large sweet potatoes, sliced THIN
  • 1 large zucchini, sliced 
  • 1 large yellow crookneck squash, sliced 
  • 2 large tomatoes, sliced
  • 2 Tbsp lemon juice
  • 1 Tbsp herbes de provence or your own medley
  • Sea Salt
  • Freshly ground black pepper
  • Sprigs of rosemary for garnish and a beautiful aroma when baking!

TOPPING: 

  • 1 cup gruyere cheese, grated
  • 1/2 cup pank bread crumbs
  • 2 Tbsp ghee (clarified butter)

 

Preheat oven to 400 degrees. On the stovetop, preheat your titanium cookware. I am using the 11" Casserole and matching lid found here

 

On the stovetop, saute the onions and garlic and red pepper flakes in red wine. Add a dash of avocado oil or ghee (if you choose). Saute for a few minutes until soft and translucent. Pour 1 cup of panko crumbs over the top, spreading evenly. Turn off the burner and begin assembling your colorful vegetables. Make sure that your more dense vegetables like the butternut squash and the sweet potatoes and sliced nice and thin so they will cook quickly. Arrange them in groupings on top of the onion mixture, alternating colors and types so that each scoop will give variety. 

 

Once you have arranged them in the pan... sprinkle the lemon juice over the top.  Sprinkle the herbs of your choice and finish with the salt and pepper. Apply the lid and bake for 15-20 minutes. The lid will make this bake fast!  Note that this is all in ONE single pan, moving from the stovetop into the oven. The lids and handles are indeed oven-safe. When they are done, remove the lid and pour the topping evenly over the vegetables. Return this to the oven, top rack, and bake another 15 minutes to melt and lightly brown the cheese and panko topping.
