This polenta tamale pie will please anyone that loves the flavors and ingredients of food from our neighbors to the south! I was excited to find organic, non-GMO polenta, so I made up a quick recipe or two, using it. Start this meal by thinly slicing the polenta and either broiling it or pan frying it to make the flavor pop and to bring it to a nice golden color. I am using the Titanium Sheet Pan to broil mine quickly. You can see this pan here.
Brown the ground meat and add your favorite seasoning. I used an organic taco seasoning packet, but you can use cayenne or any other spices you enjoy such as chili powder, paprika, and garlic powder. Next I warmed up my refried beans (also organic) in the 6" universal pot. And that is it. Layer the goodies starting with the polenta slices on the bottom of your serving dish.
The next layer is the warmed beans. I spread them evenly across the layer of polenta, as if I'm building a lasagna dish. The next layer on top of the beans is tomatoes. I used stewed, diced tomatoes, but you could use fresh slices if you prefer or even your favorite salsa. You just can't go wrong with these amazing flavors together, so use what is available in your pantry.
On top of the tomato layer, I added the cooked ground meat. This can be omitted if you are a vegetarian. We topped the warm meat with grated cheese. I used pepper jack to give it an additional spicey kick, but mozzarella would be fine too.
This is starting to look mouth watering, right? Now you should just go crazy and add what you love. Some suggestions are: Shredded lettuce, jalepeno slices, avocado slices or guacamole, dollop of sour cream, salsa, dash of hot sauce.
