POLENTA LASAGNA (Gluten-Free): This a a quick dinner that is so delicious you will love the leftovers for breakfast! Traditional lasagna comes with a huge time investment. In contrast, polenta lasagna is quick and easy. I love the texture and flavor of gently browned polenta, which is the base of this dish, making it naturally gluten free. And if you are a vegan, you can substitue the sausage and cheese for grilled vegetables and still enjoy the meld of wonderful flavors. I start with a tube of organic, non gmo polenta. Slice it somewhat thin and then put it under the broiler for quick browning that really makes the flavor pop. You can also pan fry the polenta on our griddle, across two burners, whichever you prefer.
While the polenta is browning... start warming your favorite marinara sauce in your pot. I chose organic beef sausage as my meat for this dish, but you can use anything you like. I used the lid on the titanium pot to cook it quickly, vapor style.
Grate your cheese of choice. Once the polenta is browned, and the sausage is cooked, and the marinara is warmed, you start layered the goodies. I layered it right on my serving platter, but you can layer it in a baking dish to be warmed later if you wish.
Layer 1 is the polenta, topped immediately with the shredded cheese so it will melt. In mine, this was mozarella cheese. This is your base, substituted for a noodle in a traditional lasagna. The corn polenta adds a unique flavor I really enjoy. Next layer is my cooked sausage.
Next, top that with the warmed marinara sauce, more cheese, and of course some fresh basil. I like fresh grated parmesan so I've added that to the top layer. You are ready to serve!
