I'm not even sure I can call this a recipe because it's so darn simple. So instead, it's a dinner idea! Healthy Egg Drop Soup is packed full of protein and is gluten-free if you are looking for that. Ours is soy-free too.
Start by sauteing your diced onion in the butter. Once they are soft, add the chicken broth, the coconut aminos, salt and pepper. Bring this to an easy boil.
Beat the eggs in a separate bowl. Now, while stirring the broth mixture, slowly pour the egg into it, keeping it moving constantly. Serve in bowls and top with the green onion pieces.
