I love the flavors of asian stir fry dishes, but really want to avoid eating rice as it is empty carbohydrates. The solution is Shirataki Rice, which has no carbs and does not raise your glycemic index either. So, in this recipe for a healthy beef and broccoli stir fry, I've made that substitution. You can use regular white rice if you choose. Start by either cooking your rice, or prepping the Shirataki rice. Here's how... Drain and rinse it in a colander. It will have a strange odor, which is normal. Then boil it for two minutes in your Titanium universal pot. See here.... This is what the package looks like.
Once you have boiled it, strain the water away and put it back into your Titanium Universal pot to "dry" it. Put the pan on medium low heat and move the Shirataki around in the pan until it loses the slimy texture and becomes more dry like cooked rice. Set this aside as it's now ready!
Next use a Titanium Frying Pan or Sauce pan to vapor cook the broccoli, making it tender and delicious. Add to the cooked broccoli, the rest of the vegetables and gently stir fry without the lid.
In a jar, add the garlic, ginger, sweetener, coconut aminos, black pepper, 1 tbsp arrowroot and a dash of vinegar. I also add a healthy bit of hot chili oil because we like this very spicy. Shake well. Now simply cook your meat in the skillet, add the vegetables, pour the sauce over the top and mix it all together. Add a scoop of Shirataki Rice into each bowl. Top with the beef and broccoli mixture. Top with sliced scallions. Enjoy!
