Chicken Pasta Recipe

This Chicken Pasta Recipe is super easy and fun to make because you can throw in whatever you have on hand and enjoy... customize it your way! I love that I can grill my chicken right on my stovetop and I do not have to go out into the heat and turn on the gas grill. Here you can see I used the European Casserole pan (click here to see it) and applied the lid so the inside of the chicken was brought up to temperature really quickly while the outside got nicely browned.

INGREDIENTS:

  • Chicken Breasts (preferrably free-range, antibiotic free)
  • Red Bell Peppers, chopped
  • Fresh Basil, chopped
  • Stewed tomatoes (canned or fresh)
  • Parmesan cheese
  • Pasta of your choice: Here I am using the Jovial Foods Farfalle (gluten-free)
  • Sea salt and freshly ground pepper

 

To start, grill the chicken as shown above. Let the breasts cool so you can handle them. Cube them for use in the pasta. Using the same pan you cooked the breasts in, add your stewed or fresh tomatoes and your favorite seasonings and heat through. Using the same pan means your clean up is that much easier.

Once this is complete, you can start chopping and prepping your vegetable salad. I used cabbage and red onions, but any salad will accompany this pasta nicely.

 

Now it is time to layer the pasta ingredients into the bowl and toss. Fresh chopped Red Peppers and Fresh Basil. Followed by grilled chicken. Followed by the stewed or fresh tomatoe sauce. Followed by freshly grated Parmesan cheese. Add the pasta and toss gently. You can add some of your favorite Olive Oil too, for flavor. And of course, sea salt and freshly ground pepper.
