Cauliflower Mashed "Potatoes"

These are creamy and delicious... you won't miss the potatoes/starch. I am not on a special diet, but these are also grain-free, paleo, gaps and primal for those who are! Make this recipe your own. I add a lot of garlic, because I love it. You can add whatever you like the flavor of... such as rosemary, tarragon, or anything that compliments the dish you serve it with. Here is the cauliflower getting ready for vapor cooking...

Cauliflower Vapor Cooked

 

Ingredients:

  • 1 large head cauliflower, cut into bite-size pieces (about 6 cups)
  • 8 tablespoons unsalted butter (you can use ghee instead to avoid dairy)
  • 2 tablespoons whole milk or almond milk
  • 1/2 teaspoon celtic sea salt (truly, use celtic for not only flavor but health!) See my blog on that topic here: http://www.titaniumcookwarecollection.com/salt-and-high-blood-pressure/blog-16/
  • 1/8 teaspoon fresh ground pepper
  • I personally add a LOT of fresh garlic (optional)

 

Place cauliflower in a Titanium pot or sauce pan with NO WATER. If you want quick results, add just a sprinkle of water, or just what remains on them after rinsing. Add the lid and turn the temperature to medium. See the condensation from on the lid. Once that happens, set the timer for about 8 minutes. After 8 minutes, remove the lid and poke it with a knife. If it gives easily, it is done! (Try not to remove the lid in between, you need that vapor!)

 

Now we are going to do a quick sidebar on cleaning that pan. It will look like this, and you think you've ruined your pan. Watch here... easy to clean!!!

So back to our recipe... Put your cauliflower into a food processor or blender. Add butter (or ghee), milk (or almond milk) salt and pepper and blend until smooth. Next, I move it to one of my Titainium pans to heat it up for serving, or move it to a casserole dish, cover and refrigerate for later.
