The best way to cook butternut squash is quick and easy and preserves nutrients and flavor! The bright yellow and deep orange colors of winter squash make it evident that they contain a powerful combination of antioxidant and anti-inflammatory compounds which have been shown to have clear potential in the area of cancer prevention and cancer treatment. Also, good news-- it’s a low fat vegetable and can help with weight control, which puts women at a lower risk for developing breast cancer. If you sometimes hesitate to cook squash because it takes so long, think again! You can cook it fast and keep nutrients and flavor locked in with this method.
First, select your squash and slice it down the center, lengthwise. Clean out the seeds. Put just a smidge of water, or none, in the bottom of your Titanium Exclusive Fry Pan or Sauce pan. Apply the lid and turn to medium high heat. When steam forms (seconds), turn the heat to medium low and set your timer for 20 minutes.
I served mine as show with a chicken breast, grilled to perfection in my Grill Pan, and topped with Olive Tapenade and a smear of Pesto Sauce. On the side I indulged in a fried mashed potatoe patty. I fried the potatoe patty in a Titanium frying pan, without using any grease or fats. It browned nicely and it did not stick.
